Taking inspiration from my recent trip where I had some hearty Mussel Soup that kept me warm on the wet and chilly Tuscan nights, I’ve jazzed up the Mussel Soup with leeks, garlic, herbs, diced Italian tomatoes and the Italian hearty grain farro, for added heartiness and bite.
